Sauteed Crushed Eggplant

This dish is easy to cook. A simple vegetable viand that is perfect to eat on a budget. If you love eggplants, this dish is dedicated for you. This dish begins when you boil the eggplants to soften the inner and outer parts, then it is crushed with fork before sauteing with garlic, onions and tomato. Procedures: 1. Boil the eggplants for 15-20 minutes to soften the parts that will crushed. 2. Transfer on a serving plate and crush each eggplant with the back of fork. Add soy sauce and vinegar on the eggplant and mix well. Set aside. 3. Saute garlic, onion and tomato on a pan with olive oil on a medium heat. 4. Add the crushed eggplants and saute together with the garlic, onion and tomato. Sprinkle with pepper and little salt. (Adjust to taste) 5. Transfer on a serving plate and serve hot.
