Fried Eggplant ( Tortang Talong)

- heat cooking oil. saute garlic and onion until limp. - add in ground pork and season with salt and pepper. - cook for 10 minutes or until pork turns white in color. Transfer on a plate to let the mixture cool down. - when mixture is cold enough to handle, spoon 2-3 tbsp of meat mixture and put on the center of flattened eggplant. - cover meat-filled eggplant with beaten egg and dash of flour. - heat cooking oil.
