Tenderloin with honey and cranberries
Wash the meat and divide it into 8 equal sized medallions. In a bowl, mix together peas, rosemary, honey, oil, salt, pepper and chopped peppermint. Mix well to obtain a smooth mixture-marinate for meat. Marinated it for at least 1 hour. In the meantime, turn it a few times.
Preheat the oven to 180 ° C. In a small baking dish lay marinated meat and pour the res to the marinade on it. Push the baking tray in the oven and bake the meat for 40 minutes. Repeatedly pour the meat with the juice from the pan during baking.
Remove the baked pieces of tenderloin from the oven and serve two pieces together on one plate. Decant the sauce from the pan, add the goat yogurt and cranberries. You can pour it over the meat or serve it in cups. Served pork medallions together with red wine.
