Raw mushroom salad with celery, spicy pistachio and lemon foam.
•In a bowl,marinate mushrooms with olive oil,lemon juice,salt and pepper.place the celery in the bowl and mix well.
•In a flat plate,place mushrooms to the bottom,garnish with pistachios and celery again.
•For the foam?
In a small bowl,add the water,lemon juice and soy lecithin and along with a beamer beam it until you get a perfect foam.
•Top with the foam and serve immediately!
