Wild boar with peas,potatoes and carrots in tomato-wine sauce.
Procedure goes easy as the pressure cooker will do the hard part of the job for you! Usually,wild boar in an ordinary pot needs about 2 hours to be soften by boiling,but in pressure cooker just 40 minutes!
•First,cut the boar in small pieces or slices.
•Grate the tomatoes and chop the skin.
•Peel and wash garlic and onion,cut the garlic in thin slices and finely mince the onion.
•Peel and wash the potatoes and cut them in walnut's size pieces.
•Peel and wash the carrots,cut in big pieces(in the middle for example).
•Now,place in the pressure cooker over high heat the olive oil to heat up.
•When oil is hot,add the meat and saute every side of it.It is important to seal inside the minerals and natural meat's juices.
•Then add the onion,garlic,potatoes,peas and carrots and saute for 3 minutes.
•Finally add the wine and after a minute the grated tomatoes.
•Wait for the mixture to bubble,add the broth,reduce to medium heat and cover with pressure cooker's lid and seal.
•After 35 minutes remove steam completely and put off the lid.Turn again to high heat and season with spices.
•Be sure that boar is soft and veggies melting when beaten by a fork. Trust me,you will love the taste and easiness of this recipe! Have a nice meal!
