Light Scrambled Eggs with Orzo leftovers.
For days i was trying to figure out,what is happening with the egg yolk.
Some people say it is the beggining of all bad things.Personally,i love yolks,their color,taste and softness.
Well,i am presenting to you a different version of scrambled eggs,the light one!
•To begin,crush the eggs,seoerate whites from yolks.
•Place the whites in a bowl along with the basil,minced fennel,salt,pepper and nutmeg and start mixing until you get a great rafinated mix.
•Place the olive oil in a pan and over high heat.When oil gets hot,add the onion and saute for 3 minutes.
•Then,add the egg mixture and with a wooden/plastic spoon,mix and don't let the eggs get together like an omelette.
•In the microwave,heat up the left overs and serve in a dish,along with the eggs.
•Garnish with some fennel stems and radish slices.
Not even 10 minutes of cooking right?Even the laziest or busiest can make it at home.
