Deep Fried Tilapia with Green Mango Enchilada, Bagoong & Shrimp Paste
Green mango enchilada is one of the favorites side dish of my family. I make this side dish especially during the harvesting season here in the Philippines. My family enjoy this especially with fried fish and bagoong.

Ingredients:
Fried Tilapia 1 kg medium tilapia, (about 4 pieces) 2 teaspoons salt 1 cup cooking oil Procedure 1. Rub fish with salt including the insides. 2. Heat oil in a frying pan. 3. When the oil is boiling, put-in the tilapia. Fry each side in medium heat until golden brown. 4. Remove from the pan and arrange in a serving plate. Mango Enchilada 1 large Green Mango shredded 3 large tomatoes finely chopped 1 medium onion finely chopped 1 -2 pcs of chili pepper (optional) Procedure: 1. Combine all the ingredients in a mixing bowl. 2. Mix gently to avoid crushing each of the ingredients. 3. Transfer in a nice serving bowl Shrimp Paste: 1 cup of shrimp paste (bagoong) 3 cloves of garlic 4 tbsp of vinegar ½ cup water 2 – 3 tbsp of sugar 2 tbsp of ketchup (optional) 2 tbsp cooking oil Procedure: 1. Heat a pan with 2 tbsps cooking oil, add garlic sauté for 3 minutes. 2. Put the raw shrimp paste, water, and vinegar then stir. Cover and cook in low heat for 10 to 15 minutes. Stir once in a while. Add the sugar and ketchup let it simmer for another 3 minutes. 3. Transfer to a serving bowl and serve with green mango enchilada and fried tilapia. 4. Share and enjoy!
