Pork Meatballs & Pasta with a Four Pepper Cream Sauce

Instructions
- Saute onions and peppers if you wish or just add directly to crock pot.
- Combine first six ingredients and form into meatballs.
- Brown meatballs if you wish or just add directly to crock pot.
- Add green chiles, green chile enchilada sauce and 1/2 cup of chicken stock to crock pot
- Stir and cover.
- Cook on high for 4 hours.
- Within 45-30 minutes of serving, remove meatballs and blend sauce (if you wish).
- Add remaining 1/2 cup of chicken stock and add pasta.
- Stir and replace lid.
- Right before serving, add 1/2 can of evaporated milk and stir well.
- Serve!
For the plums:
- Mix all ingredients together and let rest in refrigerator.
- Stir right before serving.

- 1 pound ground pork
- 1/3 cup oatmeal or other dry ingredient
- 1 egg
- 1/4 cup parmesan cheese
- 2 tbsp black pepper
- 2 tbsp garlic powder
- 1 poblano pepper, diced
- 1 anaheim pepper, diced
- 2 jalapeño peppers, diced
- 1 small can green chiles
- 1 can green enchilada sauce
- 1 onion, diced
- 1 cup chicken stock
- 1 cup pasta
- 1/2 can evaporated milk
For the plums:
- 2 ripe plums, chopped
- 1 tbsp balsamic vinegar
- 1 tbsp rice wine vinegar
- 1 tbsp good extra virgin olive oil
- Salt & pepper
