Dough: In medium bowl, combine coconut oil and sugar. In a separate bowl, add warm nut milk, adding yeast to the milk, whisking well to fully dissolve. Add milk-yeast mixture to coconut oil-sugar mixture. Add remaining ingredients and combine thoroughly. Dough should feel soft. Let stand in a warm dry place to let rise. Dough should double in size. Filling: In a small bowl, combine coconut sugar and cinnamon. Preheat oven to 350 degrees. Roll out dough onto a lightly quiona flour-dusted surface into a rectangle until it is about 1/4"-thick. Cover with an even layer of coconut sugar and cinnamon filling. Roll dough into a cylinder. Cut ends and discard. Cut dough into 8 slices and place into a greased round glass pie pan. Bake until golden brown, 25 minutes. Remove from pan and coat with raw honey if desired.
