Fish a la Spetsiota (Traditional recipe from Spetses island,Greece)

Usually,when we say Spetsiota in Greece,we mean grouper fish or any other big fish.I present to you this recipe done with a dorado,believe me,this special dorado's skin is a great...couple with tomato's awesome juices.
•Wash and clean the fish.
•Marinate the fish with lemon juice,salt and pepper.
•In a pot,with olive oil,saute the onion and garlic chopped,add the tomato paste while stirring constantly,the tomato chopped,minced dill,bay,wine and broth or water and finally salt and pepper.
•Let it boil for about 20 minutes in low heat.
•Grease a baking pan with oil,add some sauce and the fish.
•Add all the sauce and place in the fish's surface:
1 tomato roll,some breadcrumbs and bake in the oven at 180 celsius degrees for about 20 minutes per kilo of fish.
Serve immediately(if you like along with boiled potatoes)
