Bake Biko
Bake Biko is a popular Filipino rice cake made from sticky rice and is usually topped with latik.
Directions:
1. Boil rice and thin coconut milk in a heavy pot. Simmer until rice is almost dry, around 15 to 20 minutes. Turn the heat off and add brown sugar and butter.
2. Spread the rice mixture in a well buttered 11 by 7-inch baking pan and bake in a preheated 300°F oven for 20 minutes while preparing topping.
3. Meanwhile, mix condensed milk, coconut milk, molasses, and pandan juice in a saucepan. Cook over medium to low heat, stirring constantly until it thickens like jam, around 30 minutes.
4. Turn oven heat up to 350°F; continue baking until top is brown, about 15 minutes.
5. Serve the cake cut in squares and sprinkle with latik.

2 cups malagkit (glutinous) rice 3-1/2 cups diluted coconut milk 3/4 cup sugar 1/4 cup butter 1 egg, beaten 2 tbsp. butter, for greasing pan Topping 1 can condensed milk 3/4 cup thick coconut milk 2-3 tbsp. flour, for quick thickening 1 tsp. vanilla (or pandan flavouring)
