Ingredients:

Potato Croquettes - Pommes Croquettes 250 g starchy potatoes (about 1 potato) 15 g butter 1 egg yolk 100 grams flours 3 eggs 200 grams of bread crumbs Salt and freshly ground black pepper, to taste Nutmeg, freshly grated 1. Pe heat the oven to 350°F to 400°F. 2. Bake a whole potato on rock salt, until tender. Scoop out and reserve the potato pulp. Discard the skins. Alternatively: boil a peeled and roughly cut potato until tender, then drain and dry out slightly in the oven, per chef instructions. 3. Run the potato pulp through a food mill. Mix in the butter and egg yolk and season with salt and pepper to make the croquettes mixture. 4. Shape and Bread the croquettes. 5. Deep fry in a 350°F oil until golden.
