Palta Rellena Recipe

Peruvian corn is what makes the difference in this delicious avocado cold plate.  But if you can´t get it you can add another vegetable.
  • Cut the vegetables into small squares
  • Boil and drain vegetables and keep them in iced water so they won´t lose their color
  • Boil corn with a little sugar and chamomile. Separate the corn grains
  • Cook the chicken and cut it in squares
  • Wait until all ingredients are cold
  • Mix with mayonnaise, salt and pepper
  • Cut avocado in halves and season with salt
  • Fill avocado with vegetables and garnish with tomato and lettuce
