Roasted Red Bell Pepper Pasta

Cook spaghetti in salted rapidly boiling water until al dente, drain and keep aside.Heat olive oil in a vessel, add tomato puree and cook for 4 mts.Adjust salt. Add paparika and the ground pesto and mix. Add the cooked spaghetti and toss. Sprinkle grated cheese. Turn off heat. Garnish with fresh parsley or coriander leves. Remove the pasta onto a serving dish and serve warm.

4 cups boiled spaghetti or penne (whole wheat),1 1/2 tbsps butter or olive oil,2 tbsps tomato puree,salt to taste,1 tsp paparika or 1/4 tsp red chili powder,1 tbsp grated Parmesan cheese, 2 roasted medium sized red bell peppers,2 cloves garlic,3-4 fresh basil leaves ,5-6 toasted almonds,peanuts,1 tbsp olive oil,1 tsp balsamic vinegar (optional),black pepper powder to taste
