Greek Giouvarlakia avgolemono(altered with turkey meat)

A very Greek traditional dish,families love it,kids also.Everyone has to say a good word if is being asked about this dish.Cardio problems of a close member of my family urged me to alter one material of this recipe with something more healthy.And this is the meat.I replaced pork and beef with turkey minced meat.Results are great,i can say better than the original.It is just up to you and your apettite.Try to add no salt as that is more and more healthy. A great way to reduce salt in a food is to add a lot of spices that not only give taste to the food but seal the body from malfunctions and serious ilnesses such as cancer or diabetes. Let's start by messing up with materials that will enrich the turkey minced meat. First,clean and wash the fresh onions.Cut in rolls,about 1mm thick. Place in a bowl. Then it is dill's time.In this recipe i do not prefer the stalks.So,cut it finely,do not mince it.. To continue,cut in slices the garlic cloves and place everything in the bowl. Now,to proceed,equip with a beamer.Cut the onion inside the beamers pot. Add all the other materials in the pot along with some olive oil. Blend very well till you get a fine mxture. In a mixing bowl,add the mince meat. Place the dry basil,pepper,some cajun pepper and the mixture you previously blended. Finally add the rice and start mixing with hands. Mix well until you combine all materials with minced meat and get a great dough. When done,add the breadcrumbs and mix again. Time to give some shape to the dough. With hands,cut a small amount of dough and start making balls.. In a boiling pot,add the broth and let it reach the boiling point. When it is in the perfect point add the balls that you have made.Cover with a lid and let it boil for 20 minutes until rice is soft and balls cooked well. Let's prepare ourselves for avgolemono sauce.Actually i am providing you the professional way to do it with corn flour and not just flour. Squeeze the lemons and drain to get the pure juice without cores. Pour it in the pot and cover. In a bowl,seperate and place only the egg's white parts. Add the rest olive oil in the pot. Now,start hitting with whisk the egg's white parts,add the yolks in a minute. Place 1 big spoon slowly from pot's containing,hit well and remove the foam with a spoon. Add the corn flour,mix well,then add 2 more big spoons of pot's containing,mix again. Empty the egg mix in the pot while draining well and start shaking the pot.Cover and let it aside. Pick some aneth and chop it.Place it into pot and start shaking again. Serve imediatelly and enjoy with plenty of feta!!!
